Heir of a dynasty of restaurant owners since 1896, Carles Gaig was brought up in the kitchen of the old family business -an eatery in the Barcelonan neighbourhood of Horta- where he learned traditional Catalan cooking from his great-grandmother and his mother.

Over the years, the chef has developed and modernized his family’s culinary wisdom through a delicate and personal cuisine that has earned him multiple recognitions, among the most important is the Michelin star he has maintained since 1993.

In the Gaig Restaurant of the Mercer Hotel Torre del Remei, he continues to focus on tradition and adapts it to local products from La Cerdaña and the hotel’s organic garden, personally selecting and treating them with care to offer a high-quality gastronomic experience. An interesting wine cellar completes the proposal.

The chef culminates his professional career in the Torre del Remei and both him and his wife and Maître D', Fina Navarro, have a special feeling because it was the first place they chose to spend their first vacation together: “Doing the work that you like in an environment where you feel connected is a gift.”
